Okinawa’s ‘instant miso soup, full of flavour – Kachuu-yu

Dried Bonito 3g
Miso 1 tbsp
Hot water 150ml
Shallots (optional) To taste

– Dried Bonito : Shinsen Ichiban Hana Katsuo Hana (Yamaki)
– Miso : Combined miso (Shinshu Ichi Miso)

 


 

Directions

Put the Dried Bonito and Miso into a bowl with some shallots, then pour in some hot water.

‘Kachuu’ is an Okinawan word for ‘Katsuo (Bonito)’, and Kachuu-yu is an ‘instant’ style miso soup that’s been enjoyed in Okinawa for a long time. Okinawa consumes five times the national average of Dried Bonitos in Japan, so Okinawan miso soup is full of it.

The amino-acids in both the Dried Bonito and Miso paste helps to detoxify your liver so having  bowl of it after drinking could prevent hangovers.

This soup will hydrate you with plenty nutrients too. It’s high in protein and low calorie so it’s also perfect to help achieve weight-loss.

The main ingredients are very simple so you could easily arrange it to make it more colourful and enticing. For example, you could add tofu, wakame seaweed, tororo konbu seaweed, garlic or umeboshi plums instead of just shallots.

Ingredients

Mozuku seaweed 200g
Carrots (optional) Half a one

 

Crumbs

Egg 1
Water 100ml
Salt To taste
Powdered Japanese Stock (optional) To taste
Oil Appropriate quantity

Ingredients you can buy at Tokyo Mart

– Mozuku seaweed: Miyakojima Shaki Shaki Mozuku (Takagi Kaiso-Ten)
– Powdered Japanese stock: Dashinomoto (Yamaki)

 


 

Directions

1. Wash the Mozuku seaweed and squeeze off as much water as possible. Dust with flour (prepare extra to do this with). Julienne the carrot.
2. Mix the ingredients for the crumbs then throw in the mozuku seaweed and carrot.
3. Fry at 180 degrees. Adjust time in the oil according to size – the standard time is roughly 3 minutes.
