Takanoi Shuzo was the first in Japan to experiment with snow-aged sake. Made from contract-grown rice in Ojiya and crafted with the skill of Echigo Toji brewers, it offers a pure and delicate flavour. Embracing the clean air, fresh water, and blessings of nature brought by the snow, the brewery strives to convey this natural gift in every bottle.

In 1979, Ojiya City, Niigata, declared itself a “Snow-Resilient City,” embracing both the challenges and benefits of heavy snowfall. Inspired by the local tradition of storing vegetables in snow, the brewery pioneered Japan’s first snow-aged sake in 1987. By burying freshly pressed sake tanks in snow, they create a uniquely smooth and mellow flavour.

This product was born with the slogan “From Rice Planting to Sake Brewing – Join In!” Supporters help with rice planting in May and brewing in January, working alongside farmers and brewers. This hands-on experience builds fans, promotes the brand, preserves the local environment, and shares the story of sake.

Made using lactic acid bacteria discovered in Niigata’s snow cellars, this sake cocktail combines sake with sake-kasu yogurt (Jougurt), creating a drink reminiscent of yogurt. With refreshing acidity, fruity notes, and low alcohol, it’s enjoyable even for those who typically avoid sake. Its snowman-inspired label adds a cute touch, making it popular with women.

Using contract-grown mochi rice from Niigata and select ingredients, all stages—from polishing to packaging—are done in-house. Through skilled craftsmanship, they bring out the full flavour of Niigata rice while preserving traditional hometown tastes.

Enjoyable as a snack or appetizer, it appeals to both adults and children and ranks among the top-selling items.
