The Highly Popular “The PREMIUM MALT’S HOUSE” Returns to Sydney! 

Last year, many people joined the limited-time pop-up store by “Suntory The Premium Malt’s.” This year, it will run for 17 days from Friday, July 26th to Sunday, August 11th at “ICHOUME” in Sydney’s Darling Quarter, open every day for approximately two weeks.  

At this pop-up store, you can enjoy a special beer experience that you won’t find every day. In addition to “The Premium Malt’s,” you’ll have the opportunity to try rare beers like Black beer, Half & Half, and beers made with foam, which are hard to find even in Japan. This is the perfect chance to sample various Premium Malts, including a tasting set of selected beers, making it a must-visit for beer enthusiasts. 

Enjoy five types of popular Premium Malts with their rich flavours, specially paired with food menus prepared for the event. Indulge in this exceptional beer tasting experience! 

On International Beer Day, Friday, August 2nd, a live broadcast will be held simultaneously around the world, excluding the United States. At the pop-up store, we will join the global live broadcast and have a toast together. Guests present at the toast will receive a free beer! 

Additionally, this year features a new limited menu item called “SUNSET.” There will also be giveaways of limited-edition merchandise and a special experience where you can print photos on your drinks with the “Kami-Awa” foam art. This year’s event promises to be even more exciting than last year!

Limited-Time Event The PREMIUM MALT’S HOUSE 

“The PREMIUM MALT’S HOUSE,” where you can experience the charm of “The Premium Malt’s,” was a highly successful pop-up event held in 9 cities worldwide last year. Sydney saw tremendous excitement as crowds enjoyed the limited-time Premium Malt’s to the fullest. 

This year, “The PREMIUM MALT’S HOUSE” returns to global cities, starting from Seoul on Thursday, July 11th, followed by Hong Kong, Singapore, Sydney, Times Square in New York, Taichung, Dodger Stadium in Los Angeles, and Taipei. 

“The PREMIUM MALT’S HOUSE” offers a rare opportunity to enjoy exceptional beers like “The Premium Malt’s,” “The Premium Malt’s Black,” and “Half & Half,” not commonly found elsewhere. Last year’s favourite, “Kami-Awa Mliko,” also returns! During this event, beer enthusiasts can relish the freshest and most delicious brews sourced specially for the occasion. 

This year introduces the exclusive “SUNSET,” making its Australian debut. Guests can also partake in giveaways of limited-time merchandise and indulge in the unique foam art experience, where photos can be printed on drinks!

Marinated Salmon (The Premium Malt’s)
A special Nanbanzu vinegar, rich in umami flavour, made using the same red vinegar as sushi rice, complements the vibrant taste of “The Premium Malt’s” beer. Crispy fried green onions provide a delightful accent. 

Sweet Potato Butter (The Premium Malt’s Black)
Oven-roasted sweet potatoes bring out their natural sweetness and flavour, complemented by generous butter and a hint of spices. This sweet treat pairs perfectly with Black beer. 

Tofu Cream Puff (Kami-Awa Mliko)
A subtly sweet tofu cream with Parmesan cheese and classic edamame creates a surprising harmony. This unique choux pastry pairs wonderfully not only with creamy beer but also with the foam-only beer “Kami-Awa Mliko.” 

‘YODATEDORI’ Slow Cocked Chicken Breast (Half & Half)
Infused with chili oil, Sichuan pepper’s numbing sensation, and a touch of acidity, this dish is a perfect match for Half & Half beer. Slow cooked to maintain juicy tenderness. 

Beef Tartare (SUNSET)
Featuring soy sauce, pickles, and oil, with a smoky undertone, this mature flavour profile pairs exquisitely with SUNSET beer. The addition of Arima Sansho pepper adds a delightful accent. Served atop crispy Japanese toast with cheese, it further enhances the dish’s deliciousness.

【Fine Ingredients】
Using the finest European hops: “The Premium Malt’s” selects premium hops and high-quality malt. Particularly, aromatic hops from Czech Republic are used, known for their distinctive aroma and bitterness. Floral and fruity notes are imparted to the beer.

Diamond Malt: Finely polished compared to regular malt, this process removes impurities from the malt’s surface, enhancing its pure barley flavour. This brings a rich aroma and deep flavour to the beer, highlighting its aromatics and sweetness.

【Unique Brewing Methods】
Double Decoction Process: Extracts maximum flavour and richness by boiling the malt twice, adding depth and complexity to the beer.

Aroma Rich Hopping: Enhances hop aroma by adding hops later in the brewing process than usual, giving the beer a refreshing fragrance.

【Natural Water Brewing】
Brewed using Suntory’s natural water, nurtured by Japan’s natural environment. The pure, mineral-rich natural water, especially from the Mt. Fuji region, adds depth to the beer’s flavour. Its clarity and balanced mineral composition enhance the quality of “The Premium Malt’s.”

First up, the classic Premium Malt’s. This year, we’re using “polished” Diamond Malt to enhance its vibrant aroma and deep richness. Enjoy it in a tumbler-shaped glass to savour its full flavour. Food Pairing: Marinated Salmon 


The Premium Malt’s Black
A rich stout brewed with distinctive toasted notes from black malt and European aromatic hops. Enjoy its full-bodied richness and flavour profile.

Kami-Awa Mliko
A rare beer poured with exquisite creamy foam known as “Kami-Awa,” reminiscent of silk in its beauty. Each bubble captures concentrated aromas and provides a creamy texture that enhances the vibrant aroma and deep richness of “The PREMIUM MALT’S.”

ICHOUME

Located in Darling Quarter, Sydney, “ICHOUME” is the sister restaurant to “Yebisu Bar & Grill,” embodying the concept of a hungout for adults. Positioned just a 3-minute walk from Darling Harbour, it offers a slightly more sophisticated atmosphere than the casual Yebisu Bar & Grill. Live jazz performances, among other events, are held every Tuesday and Friday. 

Supervised by Chef AKIKO ISHIKAWA, who has accumulated experience in numerous restaurants, ICHOUME blends Japanese and Western influences to deliver modern Japanese cuisine. Chef TOMOHIKO KIMURA specialises in integrating French culinary techniques and flavours into Japanese cuisine, while sushi master Chef SHINSUKE TODA is renowned for his expertise in modern sushi and sashimi techniques, leading Sydney’s Japanese culinary scene. 

Additionally, CHIAKI KOMURA, a certified sake sommelier, curates the sake and shochu menu, while NED GOODWYN, a globally recognised Master of Wine—one of only 200 worldwide—is in charge of overseeing the wine list in Australia.
